This past Saturday we had a wonderful afternoon of health and beauty. It was so nice to fellowship with patients and their families and friends. We had dynamic guests share information. Mrs. Telease Clark (The Corset Trunk Show) showed us how we could wear beautiful corsets. Mrs. Arlene Billingsley (www.wrapmeslimtoday.com) showed us how body wraps work. Ms.Toi (www.mstoi.com) gave us samples of nontoxic lipstick made with crayons. My fab assistant and massage therapist, NaKia gave massages. I talked about how chiropractic has impacted my life and the live of families and individuals I’ve met over the years.
We had fellowship and food. One of the hits of the afternoon seemed to be my spicy kale salad. Earlier this year I began looking for healthy alternatives to boost my health. Most specifically brain health. While researching I found that kale has some very positive benefits for brain health. I hadn’t had much experience with kale so I started looking for recipes. One of my favorite ways to enjoy it is in the salad listed below. Now I don’t really measure so the fun is in the experimentation of the taste best suited to you.
Spicy Kale Salad
Bag of fresh kale greens
Very ripe avocados (makes the “dressing” creamy)
Vine ripened tomatoes
Fresh minced garlic
Bacon Bits (I have used veggie, soy, and turkey before). The salad is so full of nutrients that I’m pretty sure it doesn’t matter whether you choose “real” bacon or not.
Mix the above ingredients. I sometimes squeeze some lemon in to preserve the color of the avocado. Enjoy and don’t forget to post your thoughts when you try it!
